OVEN FRIED CHICKEN STUFFED
Fried Chicken That's Stuffed
Recipe works best when a Breast is butterflied or fileted to your own preference.
This recipe can easily be converted to feed more servings, and the leftovers taste pretty good also
 
4 Chicken Filets/breasts
1c Italian seasoned Bread Crumbs
1 Egg
Sun-dried tomatoes
Provolone or Mozzarella Cheese (4 slices)
Ham (4 slices)
 
Preheat oven to 400. Grease an oven safe pan. Wisk egg in a mixing bowl and dredge chicken through egg.
Coat chicken with bread crumbs. Lay one slice of ham on top of chicken,
followed by one slice of cheese and 2-4 sun-dried tomatoes
(depending on size; you may also chop or dice the tomatoes).
Roll the chicken up and place in pan.
If the chicken is not cooperating, use toothpicks to keep it rolled. bake for 30 minutes.
